Sodium caprylate is a sodium salt derivative of caprylic acid which is a eight carbon based fatty acid also known as octanoic acid. Because of this sodium caprylate is also known as sodium octanoate which has the same molecular formula. Compounds of caprylic acid are generally found in milk of various mammals. It is also a minor constituent of palm kernel oil and coconut oil. Generally caprylic acid is not directly used in end-user industries but esters produced from the compound such as sodium caprylate are used in various applications.
